15 Minute Creamy Avocado Pasta

Creamy Avocado Pasta.  Basil, Garlic, Avocado, Lemon Juice, Olive Oil = delicious. This will be the easiest, creamiest sauce you will make, regardless of what pasta you use. And you are not, by any means, limited to pasta with this creamy delish sauce.  You could easily use it for your favorite chicken or shrimp preparation.

For the “pasta”, I make mine raw with zucchini, using this spiralizer I got at Amazon. While not a kitchen “essential” …. for $30, it has many fun uses….. great to make curly fries or, as I do pretty regularly,  a zucchini or squash raw “pasta.”

You can use this sauce for any type of noodle!  Regular pasta,  spelt, soba noodles or kelp noodles.  Raw or Kelp are the quickest as there is no boiling-water-wait time. Even if you are boiling, the sauce is made in 5 minutes and only requires a food processor for blending.

Fantastic light flavor….garlicky and hint of lemon.  It does need the sea salt and pepper. Add all in the ingredients in the food processor and you’re done. The avocado gives it such a creamy consistency, you would think there was cream in the sauce!  The only thing is, this sauce does not keep (because of the avocado) so it is somewhat made-to-order.

The fun part is – there are no rules here! I have jazzed it up with chopped red onion, my favorite no-salt seasoning, cayenne pepper, or a few squirts of nama shoyu.  Think outside the box on this one!  The one I made today for lunch I added capers, olives, chopped beets and chopped radish to my pasta (which is really a raw salad, but I feel like I am eating pasta!)  Bon Appétit!  xo

Creamy Avocado Pasta
adapted from Oh She Glows
yield 2 servings

1 medium ripe avocado
1/2 lemon, juiced + lemon zest to garnish if you choose
3 garlic cloves (you can up or down this depending on how garliky you like it)
1/2 teaspoon sea salt
1/2 cup fresh basil
2 tablespoons extra virgin olive oil
2 servings of your choice of pasta
Fresh ground black pepper to taste

1.  Make your pasta (raw or cooked!).

2.  Make the sauce:  place garlic, lemon juice and olive oil in food processor.  Process until smooth.  Now add the avocado, basil, and salt.  Process until smooth and creamy.

3.  When pasta is ready, toss with sauce until combined.  Garnish with lemon zest and/or fresh basil.
