Some of my favorite, regular smoothie ingredients (not all in the same drink!) include, ground flax seed, pumpkin seeds, shredded unsweetend coconut, sea salt, almond butter, coconut oil and cinnamon. I keep all of these in glass mason jars in a cabinet above my Vitamix.
You can imagine my surprise when I came across a gluten-free, no-bake bar recipe that had all these ingredients. I about fell out of my chair in excitement to make them!
I found these amazingly delicious gluten-free bars at Megan’s great site, Maid in Alaska. She has tons of great gluten-free recipes and posts on her site. This one I adapted from her site is a quick, easy, delicious (and brilliant!!) If you have a preference for a different nut, seed or spice, you can really get creative with this and make it your own. Guaranteed they will go fast! xo
No-Bake, Gluten-free, Chewy Granola Bars.

1 1/2 cups gluten free oats
1 1/2 cups crispy brown rice cereal
2 tbsp ground flax seed
1/3 cup organic raisins
1/4 cup pumpkin seeds
1/4 cup finely shredded unsweetened coconut
pinch of sea salt
1/2 cup brown rice syrup (or honey or agave)
1/2 cup almond butter
2 tbsp coconut oil
2 teaspoons cinnamon
1. Lightly grease an 11×7 pan with coconut oil. In large mixing bowl, combine all dry ingredients except cinnamon.
2. In small sauce pan, mix the syrup, almond butter, coconut oil and cinnamon over low heat until blended. Stir continuously.
3. Pour over dry ingredients and combine. Pat the mixture into the greased pan.
4. Cover with plastic wrap and freeze for a few hours before serving. After they are set, you can enjoy them either frozen or room temp…whichever you prefer.
