These little no-bake, almond-butter chews are what I would call the “good for you” rice krispie-treats. I was completely blown away by how delicious these 5 simple ingredients would be. I really thought they would be bland tasting and they are not. These golf ball size chews are the perfect thing to grab when you need a little something sweet and would be a great alternative for that candy bar or cookie, esp at about 100 calories a pop.
I was so anxious to try these 5 minute wonders, that I didn’t even bother heating up the almond butter and syrup – I literally threw everything in one bowl, stirred it up, formed 7 golf ball size chews and stuck them in the freezer. Tried one five minutes later it was awesome. Tried another 4 hours later and it was unbelievable.
You can find Brown Rice Syrup at Whole Foods or at a Natural Food Store near the honey. I used Lundberg’s organic Brown Rice Syrup.
Brown Rice Syrup is made from brown rice (gluten free) and is a great alternative to refined sugar as it is lower on the glycemic index and doesn’t produce the large spike in blood sugar.
For the Rice Krispies (Or Puffs), I used Nature’s Path Organic Rice Puffs from Whole Foods, made from organic brown rice.
These would also be great with some cinnamon sprinkled in. Make these. Now. If there are any left over the kids, guarantee they will love them too. xo
5 minute + 5 Ingredient No Bake Vegan Almond Butter Chews
Adapted from Oh She Glows
Yield: 7 golf-ball size chews
1/4 cup chunky all-natural almond butter
1 tsp pure vanilla extract
1 cup rice crisp cereal
3 tbsp organic brown rice syrup
1 tbsp cacao nibs
Directions: In a medium size bowl, stir togeter the almond butter, brown rice syrup, and vanilla. Microwave on high 35-45 seconds. Stir well and immediately add in the rice cereal and cacao nibs. Stir until well combined.
Shape into “golf-balls”. Press mixture together firmly so it will hold. Freeze for 5 minutes. You can keep them in the freezer in a sealed container.
I think I will need to make these for our upcoming road trip! 🙂
